The lamb, chickpeas, yoghurt, milk and milk powder together, turn this soup into more suitable high energy high protein delight, for residents to make the most of every mouthful of soup.
Many adults and residents are not eating enough vegetables per day, which are imperative for our overall wellbeing. This soup offers a decent number of veggies through the garlic, pumpkin and chickpeas. Pumpkin can help boost your immune system as it is high in Vitamin C, A and other nutrients. The Moroccan spice mix adds a bit of zest, tying this soup into a winter wonder.
Cream of Pumpkin & Lamb Soup Recipe
Serves 50 Adults
Ingredients
250g Moroccan spice mix           Â
10 kg Diced Lamb           Â
3 tablespoons Garlic, Crushed
125 ml Olive OilÂ
4.1kg Butternut pumpkin, peeled, cut into 1cm pieces   Â
3 L Chicken liquid stockÂ
3 L Water          Â
5L Milk, full cream         Â
260g Full cream milk, powder   Â
3kg (drained weight) Chickpeas, rinsed and drained        Â
520g Basmati rice, dry  Â
Fresh coriander leaves to garnish
750g Greek style yoghurt
Method Â
In a bowl, add full cream milk and full cream milk powder. Mix until powder has dissolved and leave aside.
In a slow cooker, heat oil and add garlic, lamb and spice mix.
Cook slightly to sear meat
Add pumpkin, stock, and water into the slow cooker with the lamb. Cook on low heat for approx. 6 hours or until lamb is tender.
Add milk, chickpeas, and rice. Cook for approximately 25-30 minutes or until rice is tender.
Using a ladle serve soup in a bowl, garnish with coriander. Top with Greek style yoghurt.
