What makes this recipe High Energy High protein?
This recipe contains some key ingredients that add extra energy and protein, such as full cream milk, milk powder and lots of cheese. Cheese is a real superstar! Did you know that per 100g of cheddar cheese, there is 25 grams of protein?! One quarter, or 25% of cheddar cheese is protein which is phenomenal. All of these natural HEHP food ingredients are great to add into meals, snacks, sauces, sides and desserts where possible to add extra energy and protein, and hopefully reduce weight loss and the risk of malnutrition in aged care.
Oil, butter and potatoes are also great ingredients to add that extra energy. Bonus with butter in mashed potato is helping the mashed potato taste delicious, creamier and richer!

RECIPE: HEHP Cheesy Mashed Potato
Serves 50
​Ingredients | ​Quantity |
​Floury potatoes, skin on | 2.4kg |
​Olive Oil | ​1 Tablespoon |
​Fine sea salt | ​13g |
​Full Cream Milk | ​600mL |
​Butter, diced | ​1kg |
​Ground nutmeg | ​½ teaspoon |
​Parmesan, grated | ​745g |
​Full cream milk powder | ​630g |
​Cheddar Cheese, grated | ​630g |
​Salt & Pepper | ​For taste |
Method
Place potato in a large pot of boiling water with olive oil.
Boil potatoes until softened, for 30-40 minutes.
Drain liquid and let potatoes cool.
Add potatoes to blender with salt and milk.
Blend together, then add 100g butter, nutmeg and 115g Parmesan.
Blend together even further.
Add the remaining butter and parmesan, as well as the milk powder and cheddar cheese.
Return mashed potatoes to pot and cook and stir for another 5-10 minutes.
Add salt and pepper for taste.
Garnish and serve hot.
Note: if you have a stick blender, you can blend directly in the pot.
